Honey Glazed Pork Chops

Ingredients:

  • 1-2 packages pork chops

  • Salt and Pepper

  • 2 tablespoons lard, or other cooking oil

  • 1 tablespoon butter

  • 2 tablespoons garlic, finely minced

  • 1/4 cup honey

  • 1/4 cup broth or water

  • 2 tablespoons apple cider vinegar

Method:

Season pork chops generously with salt and pepper. Allow to rest in refrigerator for a few hours if possible. Massage the chops with honey on both sides.

Heat a large cast skillet over medium heat. Add lard and turn heat to medium high. When hot, sear pork chops until browned. Don’t forget to hold pork chops on their sides with tongs to sear the fat cap. Remove to a plate.

Remove pan from heat to let cool a couple minutes. Reduce heat to medium. Add butter to skillet, place on heat to melt, scrape up brown bits then add garlic. Saute for 30 seconds until fragrant, then add honey, broth and vinegar and a pinch of salt. Place the seared chops back in the skillet and cook for 2 or 3 minutes per side until done or an instant read thermometer registers 145 at thickest part of the pork chop.

Let rest 10 minutes, then slice, pour remaining pan juices over the pork and enjoy!
